With the change in weather, it's time to savor the comforting flavors of fall. Smileys, our naturally tearless and SWEET onions, are the perfect addition to your autumn-inspired dishes. Their mild sweetness enhances the hearty, rich tastes of the season, making every meal a celebration of fall's bounty.

 

Here are some quick and easy fall recipes featuring Smileys that will warm your heart and satisfy your taste buds.

 

Smileys Roasted Harvest Vegetables

Ingredients:

- 2 Smileys sweet onions, cut into wedges

- 2 cups butternut squash, cubed

- 2 cups Brussels sprouts, halved

- 2 large carrots, sliced

- 3 tablespoons olive oil

- 1 teaspoon fresh thyme

- 1 teaspoon fresh rosemary

- Salt and pepper to taste

 

Instructions:

1. Preheat your oven to 400°F.

2. In a large bowl, toss the Smileys onions, butternut squash, Brussels sprouts, and carrots with olive oil, thyme, rosemary, salt, and pepper.

3. Spread the vegetables on a baking sheet in a single layer. Roast for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.

5. Serve as a side dish with your favorite roasted meats or enjoy as a vegetarian main.

 

Smileys Caramelized Onion and Apple Grilled Cheese

Ingredients:

- 1 Smileys sweet onion, thinly sliced

- 1 tablespoon butter

- 1 apple, thinly sliced (Honeycrisp or Gala works well)

- 4 slices of your favorite bread

- 4 slices sharp cheddar cheese

- 1 tablespoon Dijon mustard

- Butter for grilling

 

Instructions:

1. Melt butter in a skillet over medium heat. Add the sliced Smileys onion and cook, stirring occasionally, until caramelized, about 15-20 minutes.

2. Spread Dijon mustard on one side of each bread slice.

3. Layer the cheddar cheese, apple slices, and caramelized onions on two slices of bread. Top with the remaining slices of bread, mustard side down.

4. Butter the outsides of the sandwiches and grill in a skillet over medium heat until the bread is golden, and the cheese is melted.

5. Serve warm with a side of tomato soup for a cozy fall meal.

 

Smileys Sweet Onion and Sausage Stuffed Acorn Squash

Ingredients:

- 2 acorn squashes, halved and seeds removed

- 1 Smileys sweet onion, diced

- 1/2 lb. Italian sausage, crumbled

- 1 apple, diced

- 1/2 cup breadcrumbs

- 1/4 cup grated Parmesan cheese

- 2 tablespoons butter

- Salt and pepper to taste

 

Instructions:

1. Preheat your oven to 375°F.

2. Place the acorn squash halves cut-side down on a baking sheet and roast for 30-35 minutes, until tender.

3. In a skillet, cook the sausage over medium heat until browned. Add the diced Smileys onion and apple, cooking until softened.

4. Stir in the breadcrumbs and Parmesan cheese. Season with salt and pepper.

5. Remove the squash from the oven, turn them over, and fill each half with the sausage mixture.

6. Top with a small pat of butter and return to the oven for 10 minutes.

7. Serve warm, garnished with fresh parsley if desired.
